    Please join Bern’s Fine Wines & Spirits for a Champagne dinner featuring Bollinger on Tuesday, October 9th at 6:30pm.  Master Sommelier, Craig Collins will be with us presenting the wines, accompanying the inspired pairings of Chefs Chad Johnson and Jon Atanacio.

    Associated with luxury, celebration, and romance, the region, Champagne, is home to the world’s most prized sparkling wine. Made up of the three towns Reims, Épernay, and Aÿ, it was here that the traditional method of sparkling wine production was both invented and perfected.

    A blend of Chenin Blanc, Cabernet Franc and Chardonnay, this is a round, mouthfilling sparkling wine with ripe flavors layered with grapefruit acidity and a tight, final texture that is crisp and mineral.  90 points Wine Enthusiast

    Ayala Brut Majeur
    Ayala is looking very good and offers some genuine depth and complexity for this entry-level pinot-dominant blend, driving impressive concentration into a savory and defined style.     Bollinger Brut Special Cuvée
    Lovely aromas and flavors of ripe black cherry and currant fruit, graphite, toast and candied Meyer lemon zest are set in this racy Champagne, with a refined, finely detailed mousse. The mouthwatering finish is long and spicy. 93 points Wine Spectator

    Bollinger Brut Rosé
    Bollinger's NV Brut Rosé is a beautiful pink Champagne composed of 62% Pinot Noir, 24% Chardonnay and 14% Pinot Meunier> The wine gets its noble rosé color from 6% of added red wine from vineyards in Verzenay and Aÿ. Bread rolls, a hint of mocha and very fine red fruit aromas on the beautifully pure, fresh and perfumed nose lead to a highly delicate and fruity palate with a silky texture and filigreed structure. This is an aromatic, perfectly balanced and intense Rosé of great elegance and finesse. The finish is clear and fresh but also intense and highly stimulating in its subversive salinity.  93 points Robert Parker

    Bollinger La Grand Anee 2007
    Bollinger's white-golden colored 2007 La Grande Année Brut is an assemblage of 70% Pinot Noir and 30% Chardonnay from 14 crus (mainly Aÿ and Verzenay for the Pinot Noir and Avize, Cramant and Oger for the Chardonnay) that was entirely fermented in barrels and aged under natural cork for more than eight years (disgorgement date: November 2016). The wine displays a very clear, fine and complex bouquet of ripe (apricot) fruits and pink grapefruit along with chalky, toasty and almond/nougat notes. Highly elegant, fine and pure but complex on the palate, this is a full-bodied and well-structured Grande Année with a long, intense yet dry, salty, beautifully clear and cleansing finish with lingering citrus flavors and a persistent mineral structure. This 2007 is still young, but its elegance, finesse, freshness and promising complexity are fabulous. 94 points Robert Parker
