Delectus, Boulder Falls, Cabernet Sauvignon, Napa, 2016
Showing more age, the core of this wine is opaque purple, fading slightly as one moves to the rim. The additional time in barrel has coaxed out the more subtle elements, dusty cocoa powder, a slight antique wood polish, some cedar and ground espresso beans all compliment the plum dominant aromatics. On the palate similar flavors follow through, the tannins have mellowed out and there’s a sense of depth and complexity that allows the drinker to linger over each sip. Balanced acidity gives the wine a food friendly presence, allowing the red fruits to show through.
